Egg-Free, Gluten-Free Saturday

We made yummy pancakes this morning:
I started with this recipe but made a few tweaks.

B's New Pancakes
1 cup sweet sorghum flour
3 tablespoons tapioca flour
1/3 cup potato starch
2 tablespoon sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

1tsp vanilla
1/2 teaspoon xanthan gum
2 eggs (we used EnergE egg replacer)
3 tablespoons oil (I used olive oil, but next time would use coconut oil)
1.5 cups water


Mix dry ingredients, mix egg replacer and wet ingredients, add wet to dry, stir until smooth, cook in oiled skillet.
